1840 Stout Chili

In a large pot over medium heat, add oil, diced onion (optional: diced green pepper) and ground beef.

After meat is browned (no pink left), reduce heat to medium-low and add garlic, oregano, paprika, salt, pepper (optional: cayenne pepper) and green chilies and cook for about 5 minutes. At this point, either turn the pot down to low or transfer to a slow cooker and add in beer and beans (optional: tomato puree).

Simmer for 4-6 hours on low stirring occasionally and if the mixture becomes too thick, add some water.
