Pre-heat the oil to 365⁰F in a large skillet or deep fryer. Rinse fish and cut into small cubes or other bite-sized pieces, and pat dry with a clean paper towel/ Salt and pepper the fish and set aside.
Combine dry ingredients; flour, garlic powder, paprika, salt and pepper, and add beaten egg into the mixture. Measure out 12oz (355mL) of GPA in one glass and 4oz in the other.Slowly add the large glass of beer to the flour/egg mixture until fully combined and add fish pieces. The additional GPA should be drank before reaching room temperature.
Remove fish pieces from the batter and add slowly to the hot oil and fry (turning once) until golden brown. Remove fish from the oil and set on a fresh paper towel; let stand for 5 minutes before serving.
